Bagels

This recipe is from my sister-in-law that she gave me back in like 2007!! I just found it. We've made it quite a few times. They always go quickly so you may want to double it and make 2 batches! The recipe is part bread machine and part oven.
  • Ingredients

    • 3 cups unbleached flour
    • 1 cup warm water
    • 1 1/2 tbsp sugar
    • 1 1/2 tsp salt
    • 1 1/2 tsp yeast
  • Instructions

  • Add water first to machine.
  • Add dry ingredients on top.
  • Make a well for the yeast and add.
  • Press the button for a white bread cycle or dough cycle if you have one. Let dough sit for 20 minutes after dough cycle. (You can also listen for the machine to stop kneading the dough, then unplug and let sit for 20 minutes)
  • Remove dough and cut into 8 equal pieces.
  • Roll pieces into 1 inch thick ropes then wet the ends and connect (making bagel shape).
  • Put on a greased cookie sheet, cover and let rest for 15 minutes. At this time, start preheating the oven to 450 degrees.
  • Start boiling water in a large pot (about 3 inches deep) with 2 tbsp of sugar.
  • When the 15 minutes are up, carefully put the dough in the water and boil for one minute, turning once. Take the bagels out, drain and put back on the greased cookie sheet.
  • Bake for about 15 minutes or until it's the the desired brownness.
  • Notes

You can also add cinnamon, onions, garlic, cheese or anything really into the batter. If adding cinnamon add a little more sugar to give them a sweetness like commercial bagels.
I haven't calculated the cost compared to store bought bagels but they can't be that expensive to make.

Cheap easy bread

So in researching breads without HFCS in them or other ingredients Bryson can't have, I discovered this really great YouTube program, called Great Depression Cooking with Clara. She has some amazing recipes. In this economy, and with it only looking like it's getting worse, I figure we might as well live as frugally as possible. This recipe is simple and very easy...even for me! LOL... Also, I can adapt the recipes to leave out what he can't have.

One thing I will mention is that she doesn't mention (at least I didn't hear her) how much salt to put in. I consequently put NONE...don't do that. It doesn't make for tasty bread. hehehe. I halved the recipe, cut the dough into 4 pieces. I used 2 of the pieces of dough as pizza crust.
